Abstract

The behavior of bovine meat consumers’ in the central-western region of Brazil and their profile are provided. A theoretical review discusses changes in the eating habits that may influence the strategic positioning of firms. The principle of imitation-distinction, discussed by Bourdieu (1996), as one of the determinants in dietary habit changes could be verified. The study provides the evolution of the intake of bovine meat in Brazil throughout history. The deduction method, documentary research, surveys and procedure methods were employed. The profile of above-the-average bovine meat consumers characterizes 30 to 39-year-old people, with low income and schooling, and with difficulties in purchasing food. Results show that the imitation-distinction principle influences the development of food consumption behavior.
