Abstract

The production of grapes, wine and derivatives in Brazil is described. Grape production is related to the beginning of colonization, with several cycles, and the introduction and establishment of several types of vine strains. Grapes are used for consumption in natura, for the processing of juice and concentrates or for the production of table and fine wines. Wine consumption, known in ancient times, was always associated with religious symbolism, plenty and prosperity. Currently, it is a beverage of great economic importance triggering national and international markets. During the last decades, the wine market has underwent a thorough transformation with production not only in the states of São Paulo and Rio Grande do Sul, but also in the semi-arid region of Northeastern Brazil and on the Santa Catarina plateau, each with specific characteristics. Although per capita wine consumption in Brazil is low, recent economic stability and increasing cultural stance evidenced high growth with the need for competition techniques with imported products and better environmental management of effluents with great amount of organic material.
