Resumo

Bean grains have very important nutritional components, ensuring a balanced diet especially because of their levels of proteins, carbohydrates, and minerals. Year after year, there is an increasing demand for healthy foods grown under organic farming systems, whose strategies include the use of landrace cultivars. The objective of this study was to quantify the protein and mineral content in bean grains from landrace cultivars grown under an organic and conventional farming system. A total of 26 cultivars were used: 22 landrace and four commercial cultivars. There was variability between landrace and commercial cultivars for all study nutrients in both organic and conventional farming systems. In general, bean grains grown under organic farming showed nutrient contents higher or similar to those of the conventionally grown grains, especially the BAFs (Bean Germoplasm Collection) landrace cultivars 47, 55 and 75.
