Abstract
Phenol contents in different juices such as pineapple (Ananas comosus), acerola (Malphigia sp), cashew (Anacardium occidentale) and common grape (Vitis vinifera) were quantified and compared to enhance bottled tropical fruit juice. Folin-Ciocaulteu’s method, with modifications, was employed. Total phenol contents were obtained from a calibration curve performed with Gallic acid (0.01-0.4 mol L-1) and expressed as mass of Gallic acid equivalent by 200 mL of diluted juice (mg of EAG/200mL). Phenol contents 269.16±7.46, 675.14 ± 51.22, 245.71±9.22, and 261.17 ± 64.14 mg EAG/ 200 mL of diluted juice were registered respectively, with significant differences among the mean values (p< 0.05). Since acerola juice had approximately twice the phenols than the other mean rates, its consumption was consequently highlighted.
