Abstract

The high diversity of Amazonian fish, combined with the increasing demand for the full utilization of fishery resources and waste reduction, highlights the need for studies that support the sustainable use of these species. In this context, the present study evaluated the meat and by-product yields of 14 Siluriformes fish species commercialized in the State of Amazonas, considering the influence of seasonality (flood and dry seasons). The experimental design was completely randomized in a factorial scheme (14×2), with 10 replicates per treatment, totaling 280 specimens. A significant effect (p<0.05) of season on mean weight was observed, with higher values during the flood season. Pirarara stood out as the heaviest species during the flood season, whereas Dourada presented higher weight during the dry season. Eviscerated fish yields were higher (p<0.05) for Babão, Piracatinga, and Caparari during the flood season, and for Babão, Piracatinga, and Bagre zebra during the dry season. In general, most species showed higher (p<0.05) carcass yield in the dry season, except for Caparari and Dourada. Mapará exhibited the highest clean body and fillet yields, while Piramutaba stood out in belly yield. Seasonality did not influence (p>0.05) skinless yields. Pirarara showed higher (p<0.05) proportions of head and viscera, particularly during the flood season. Overall, species such as Jaú, Jandiá, and Mapará presented higher carcass yields in the dry season. These results demonstrate the influence of hydrological cycles on body composition and industrial utilization of these species, contributing to more efficient and sustainable processing strategies in the Amazonian fish production chain.
